At first, foreigners milked local cattle. Then the Japanese brought in proper dairy cows. After the war, people learned to mix powdered milk. Over a hundred years or so, milk went from a rare tonic to something we drink every day. Along the way, there were some odd chapters too: people once fed milk powder to pigs, and dairy farmers sometimes struggled with too much milk in winter.
