The Pilot Episode
This is the first episode of the Two Friends Eat Podcast. Giuseppe and Peter introduce themselves and chat about local food and restaurant news. They share their thoughts about the Sriracha shortage as well as talk about Pizza Hut bringing back the Pizza Buffet. They then recap the written reviews for last month's Two Friends Eat web series videos, while also discussing gimmicky drinks and foods. (Piro's Pizza Plus and Bakery)01:16:43 "What are we eating, what are we gonna eat?"01:31:08 Letters/Fan Mail01:58:58 And so it Ends/Thanks for Listening—————————————————————————Giuseppe’s Meatballs(stay tuned to socials for video instructions!)Ingredients:Extra-virgin olive oil1 large onion, 1/4-inch diceSalt2 cloves garlic, smashed and choppedPinch crushed red pepper1/2 pound ground beef1/2 pound ground veal1/2 pound ground pork2 large eggs1 cup Pecorino Romano1/4 cup finely chopped fresh Italian parsley leaves1 cup breadcrumbs1/2 cup vegetable stockCoat a large saute pan with olive oil, add the onions and bring to a medium-high heat. Season the onions generously with salt and cook for about 5 to 7 minutes. The onions should be very soft and aromatic but have no color. Add the garlic and the crushed red pepper and saute for another 1 to 2 minutes. Turn off heat and allow to cool.In a large bowl combine the meats, eggs, Pecorino, parsley and bread crumbs. Squish the mixture with your hands. Add the onion mixture and season generously with salt and squish some more. Add the stock and do a few final really good squishes. The mixture should be mushy and wet.Test the seasoning of the mix by making a half-dollar coin sized patty and cooking it. The mixture should taste really good! If it doesn't it is probably missing salt. Add more if it is.Preheat the oven to 350 degrees F.Shape the meat into desired size (I like making them pool ball sized). Coat a large saute pan with olive oil and bring to a medium-high heat. Brown the meatballs on all sides. Place them on an oven pan and bake them in the preheated oven for about 15 minutes or until the meatballs are cooked all the way through. If using right away, add them to your big pot of tomato sauce. If not, they can be frozen for later use. Serve with pasta and sauce or just eat them straight out of the pot.Enjoy!
