 Neil Saavedra, the Fork Reporter, is with us as the Ridge Fire doubles to roughly 1,000 acres and a fire-nado about 100 feet high spins over the Grapevine, with a motorcycle crash separately jamming the 15 southbound through Victorville and Hesperia. Angel checks in later with better news — the 5 southbound has reopened in Gorman. But the heart of this hour belongs to Stefan "The Foosh." It's been exactly one year since his accident, and we go back through that day, everything since, and one more thank you to the first responders and everyone who showed up when it counted. Conway, meanwhile, faces a far less noble line of questioning: is he a selfish lover? Then Saavedra takes us to Wildfork in Encino to talk flash freezing, and why your home freezer is failing you — it's simply too slow. Freeze food fast and the water inside forms tiny ice crystals instead of big ones, so cell walls stay intact and the flavor and juice stay put. His at-home fix: spread single pieces — berries, cuts of meat — on a baking sheet so nothing touches, freeze for two to three hours, then bag them. No clumps, no mush.
