Plant Based Eating: the What's, the Why's & the How's (Episode #170) with Ali Essig
After having my 7th baby (which was nearly 6 years ago), I just couldn’t get a handle on my health. My blood pressure was high, the weight wasn’t coming off like it had after baby #6, my energy was low and my other numbers weren’t looking great. I was very caught up in being busy with my baby and other 6 kids. I was busy building Helping of Happiness, the pandemic hit, I sent a daughter to college, then on a mission, then a son on a mission. It seemed the hamster wheel never stopped and I wasn’t taking time for myself. My aunt has been eating plant based for years, and every time we talked, I felt these nudges that I should try it. I just never felt like I could commit to it with everything else in my life. About a year ago, I started doing “Tackle it Tuesdays” with some friends. The lifestyles we were striving for felt too big and overwhelming, but we felt we could do it one day a week! No problem!! It was great support and my numbers did improve a little, but not enough. A few months ago I ran into a class Ali Essig was giving at the Thriving Mothers Summit, all about Plant Based Eating. That nudge was back and even stronger than before. I decided it was time to jump in with both feet. I’ve been working on plant based eating now for over 2 months and it has been so good for me. I feel so much better than I did. I’m learning a lot, stumbling plenty, feel like much healthier, sometimes frustrated, happier in my own skin, and it’s something I want to stick with the rest of my life. I know this may not be for everybody. But if you are feeling those nudges like I was, or feel you need a change, maybe this episode is just what you need.
