Cynthia discusses wearing many different career hats. The experience of exploring a new career as a therapist. Now that her partner has passed and kids have grown older. Spanakopita 3 lbs fresh spinach1 onion3 scallions Garlic (to preference)1 lb feta cheeseDill (the fresher the better)One egg Phyllo pastry dough ButterOlive oilSalt and butter pepperPre-heat oven to 325-Pick off spinach stems and sauté in stages until wilted squeeze out excess water and set aside -Chop onions, garlic and scallions and sauté in olive oil until tender -add spinach, feta cheese, dill, raw egg , salt and pepper and mix until blended- Take thawed phyllo dough and lay out sheets (follow instructions on package for thawing)- keep phyllo moist on a lightly damp kitchen towel - (it dries out quickly)- Using a 9 x 13 baking pan spread a light amount of olive oil on bottom of pan - layer 2 sheets of Phyllo at a time in pan using melted butter (or olive oil) and pastry brush to brush butter (or olive oil) between 2 sheets of phyllo at a time layering about 1/2 package of the sheets- add spinach/feta mix and spread out evenly over phyllo dough - continue layering butter and phyllo dough sheets on top of spinach mix - can use the whole package Brush butter onto top last sheet and bake for 1 hour or until golden brown and crispyEnjoy …--- Support this podcast: https://podcasters.spotify.com/pod/show/ann-myra/support
