Mickey Mouse Gingerbread Cookies

Ingredients

COOKIE DOUGH:

  • 6 cups flour
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 4 tsp ginger
  • 4 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 3/4 cup butter
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 1 cup molasses

ICING:

  • 3 cups powdered sugar
  • 2 egg whites
  • 1 tsp vanilla extract

-OR-

**Use melted white chocolate to decorate your finished cookies.

Helpful Tip: Add flour to your cookie cutters to prevent sticking.

Directions

  1. Combine flour, baking powder, salt, ginger, cinnamon, and cloves in a large bowl. Whisk together. Set aside.
  2. Combine butter and brown sugar in an electric mixer bowl. Add eggs and mix. Add molasses and mix. Slowly add dry ingredients until fully combined.
  3. Flour your surface. Roll out dough. (Make a little thicker for softer cookies.) Use cookie cutters to cut out Mickey shapes.
  4. Bake at 350 degree Fahrenheit for 10 minutes. DO NOT over bake.
  5. To prepare icing, combine powdered sugar, egg whites, and vanilla extract in a bowl. Mix completely. Move to a pastry bag. (Or use melted white chocolate.)
  6. Once cookies are cool, use a piping bag to apply icing.
  7. Sprinkle with powdered sugar.
